CHEF RUFFO

Since I was a child I discovered my love for cooking and the importance of sharing it with the ones you love the most. Today my passion lies in the gastronomy of California and Baja California, a concept that I call “CaliBaja”, and since 2015 I share with you through my dishes.

I started in gastronomy at the age of 18 working at the Grand Hotel and Baci Ristorante in San Diego. With the dream of becoming a professional Chef, I studied at the Culinary Art School in Tijuana. Since then I have gone through the kitchens of: Javier Plascencia in “Romesco” (San Diego), Massimo Bottura in “Osteria Francescana” (Modena, Italy), as well as working with Jesús Sánchez in “Cenador de Amos” (Cantabria, Spain) and cooking alongside Chef José Andrés at the South Beach Food & Wine festival (Miami).

In order to share the best of the region’s gastronomy, in 2015, together with my family, we opened the doors of “Oryx Capital” in Tijuana (now called “Oryx Restaurant”), and, six months later, from “Nórtico”, the speakeasy.

Currently I am Chef and owner of “Oryx Restaurante” and Nórtico, additionally being part of World Central Kitchen and This Is About Humanity, culinary projects with an important social commitment.

My great wish is to continue sharing the local cuisine of excellence with you!

Recognitions

His love and passion for cooking was recognized on different occasions:

  • With Oryx Restaurante he received two awards: “Best Restaurant in Baja California” by CANIRAC 2018, People’s Choice, and “Best Restaurant in Baja California” by San Diego Magazine 2019.
  • In 2017, Ruffo was named one of the leaders of Baja California by the Campestre Magazine and admitted to the prestigious Vatel Club México.

In 2019, he was awarded second place by the Nespresso Talents Awards at the Cannes Film Festival.
