Today my passion lies in the gastronomy of California and Baja California, a concept that I call &#8220;CaliBaja&#8221;, and since 2015 I share with you through my dishes.<\/p>\n<p>I started in gastronomy at the age of 18 working at the Grand Hotel and Baci Ristorante in San Diego. With the dream of becoming a professional Chef, I studied at the Culinary Art School in Tijuana. Since then I have gone through the kitchens of: Javier Plascencia in \u201cRomesco\u201d (San Diego), Massimo Bottura in \u201cOsteria Francescana\u201d (Modena, Italy), as well as working with Jes\u00fas S\u00e1nchez in \u201cCenador de Amos\u201d (Cantabria, Spain) and cooking alongside Chef Jos\u00e9 Andr\u00e9s at the South Beach Food &amp; Wine festival (Miami).<\/p>\n<p>In order to share the best of the region&#8217;s gastronomy, in 2015, together with my family, we opened the doors of \u201cOryx Capital\u201d in Tijuana (now called \u201cOryx Restaurant\u201d), and, six months later, from &#8220;N\u00f3rtico&#8221;, the speakeasy.<\/p>\n<p>Currently I am Chef and owner of &#8220;Oryx Restaurante&#8221; and N\u00f3rtico, additionally being part of World Central Kitchen and This Is About Humanity, culinary projects with an important social commitment.<\/p>\n<p>My great wish is to continue sharing the local cuisine of excellence with you!<\/p>\n<p><strong><u>Recognitions<\/u><\/strong><\/p>\n<p>His love and passion for cooking was recognized on different occasions:<\/p>\n<ul>\n<li>With Oryx Restaurante he received two awards: \u201c<strong>Best Restaurant in Baja California<\/strong>\u201d by CANIRAC 2018, People\u2019s Choice, and \u201c<strong>Best Restaurant in Baja California<\/strong>\u201d by San Diego Magazine 2019.<\/li>\n<li>In 2017, Ruffo was named one of the leaders of Baja California by the Campestre Magazine and admitted to the prestigious Vatel Club M\u00e9xico.<\/li>\n<\/ul>\n<p>In 2019, he was awarded second place by the Nespresso Talents Awards at the Cannes Film Festival.<\/p>\n<\/div><\/div><div class=\"w-separator size_medium\"><\/div><\/div><\/div><\/div><div class=\"vc_col-sm-6 wpb_column vc_column_container has-fill orx-img-side\"><div class=\"vc_column-inner us_custom_a3097ea3 type_sticky\"><div class=\"wpb_wrapper\"><div class=\"w-separator size_medium orx-img\"><\/div><\/div><\/div><\/div><\/div><\/div><\/section>\n<\/div>","protected":false},"excerpt":{"rendered":"ABOUT US Watch full video [vc_custom_heading text=\"RESTAURANT\" use_theme_fonts=\"yes\" el_class=\"orx-title\"]At Oryx, we aspire to create a unique culinary experience for you.
